Technical Guide: Achieving the "Powdered Snow" Effect
For a result worthy of the greatest chefs, success depends on the thermal shock:

Mandatory Freezing: Your entremet must be frozen through (-18°C minimum) and taken out of the freezer at the last second.

Spray Temperature: For smooth spraying, the bottle should be between 20°C and 25°C. If the cocoa butter is solidified, gently warm the bottom of the can in warm water (max 30°C).

Application: Shake vigorously. Spray at a distance of 25 to 30 cm with steady movements to avoid over-application.

Maintenance: After each use, turn the can upside down and spray briefly to purge the nozzle and prevent blockage by cocoa butter.

Ingredients: Cocoa butter, propellant gas (E943a), colorants (E102, E129). Note: Colorants E102 and E129 may have adverse effects on activity and attention in children.
