Making sugar flowers
Floral work is done with flower paste (gum paste), which can be rolled very thin and dries hard. Cut shapes with a cutter, mark the veins with a veiner, shape them on foam, then let them dry on a support before assembling.
Assembling a bouquet
Mount the petals and leaves on floral wire, gather them with floral tape, then tint them with a brush and powders for a natural gradient. Place the finished bouquet on the cake using a food-safe pick (the wire must not pierce the paste directly).
