Classic pastry rings

The stainless steel round rings are the basic tool for pastry chefs: assembling frozen entremets, dark tart rings, plating in savory kitchens. Standard diameters from 6 cm (individual) to 30 cm (wedding cake). Heights from 3.5 cm (tart ring) to 8 cm (tall entremets). Stainless steel, oven safe up to 220°C, dishwasher safe, seamless for perfect hygiene.

Adjustable rings and expandable frames

The adjustable pastry ring covers multiple diameters with a single tool: model 16-30 cm for standard entremets, 25-46 cm for wedding cakes. Expandable frame for assembly on rectangular trays from 20×20 cm to 40×60 cm. Economical and space-saving for budget-conscious workshops.

Square, rectangular frames and micro-perforated rings

The stainless steel pastry frames allow large format assembly: family entremets, buffet displays, operas and millefeuilles. Classic sizes 25×25 cm, 30×40 cm, heights 3.5 to 6 cm. The micro-perforated tart rings distribute heat evenly on the dough, for a cooked, crispy, and evenly colored base.

What height ring for an entremet?
Standard height: 4.5 cm for a classic entremet, 6 cm for a multi-layer entremet, 8 cm for wedding pieces. Consider the thickness of gelled inserts (1-2 cm) and the glaze layer (5 mm) to size the composition.
Stainless steel ring or silicone mold, which to choose?
The stainless steel ring gives clean edges, perfect for signature pastries. The silicone mold offers complex shapes but rounded edges. Common combination: stainless steel ring for final assembly, silicone molds for inner inserts.
How to unmold an entremet set in a ring?
Several techniques: blowtorch around the edge to gently loosen, cloth soaked in hot water applied for a few seconds, hairdryer at medium power. The inner rhodoid (transparent film) greatly facilitates unmolding without damaging the glaze.
Are stainless steel rings oven safe?
Yes, all our stainless steel rings are oven safe up to 220°C. Typical use: ring placed on a silicone mat or lined tray for baking tartlets, cookies, portioned puff pastry. Hand wash or dishwasher, dry immediately to prevent oxidation.
