Let the dough reach room temperature.

Knead vigorously until you get a smooth and elastic texture.

Roll out to 2 to 3 mm thickness on a surface dusted with icing sugar.

Turn regularly to prevent sticking.

If cracks appear, knead again.
Recommended quantity: 500 g to cover a round cake 20 cm in diameter.
