Usage guide for even tuiles
- Preparation: spread the cigarette dough or tempered chocolate over the mat using an offset spatula.
- Smoothing: scrape off the excess, leaving material only in the leaf-shaped cavities.
- Baking or setting: bake the tuiles, or chill the mat for the chocolate.
- Unmolding: once the material is firm, gently peel off each leaf. For the tuiles, you can shape them as soon as they come out of the oven for a more realistic effect.
Advice from the Patissland team: for a very realistic result, use a natural olive-green food coloring or sprinkle a fine pistachio powder over your tuiles before baking. The contrast with a citrus or white chocolate dessert is striking. The mat features integrated guide lines for cutting it into sections and making it easier to handle on a limited work surface.
