Does the yellow remain vivid after baking a sponge cake?

The color fades slightly during baking. For a vivid yellow in the finished cake, slightly increase the amount before baking.

How can I achieve a vanilla-style pastel yellow?

Dilute heavily: a small dab of gel is enough for 250 g of preparation. As the food coloring is highly concentrated, it is better to underdose first and then adjust.

Are this yellow and lemon yellow identical?

No, lemon yellow is a brighter, slightly cooler shade, obtained with the same E102 food coloring base but producing a different result in the preparation.
