The Pavoni Italia Tronchetto Mono PX060 mold produces 5 individual 600 ml cylindrical logs (560 x Ø40 mm) on a single 600 x 400 mm tray. Its perfectly smooth surface is ideal for mirror glaze and velvet spray. Made from durable platinum silicone resistant from -40 °C to +250 °C, it is the go-to format for individual logs, elongated entremets, and frozen inserts in boutique production.

- Chocolate-hazelnut: 70% dark chocolate mousse with a hazelnut praline insert and feuilletine crunch, finished with brown velvet spray

Assembly method
- Pour the insert (crémeux, ganache, or caramel) into a tube or Ø25 to 30 mm mold the day before and freeze for at least 4 hours
- Place the PX060 on a rigid, flat tray; no greasing is required
- Pipe the mousse to halfway up the mold and tap the tray to release air bubbles
- Center the frozen insert lengthwise in each cavity
- Fill with mousse to the top, adding a rectangular biscuit base to seal if needed
- Freeze for at least 8 to 12 hours at -18 °C; the elongated shape requires more time than a round entremets
- Unmold by gradually pulling the silicone edges outward
- Apply the velvet spray or mirror glaze while the dessert is still frozen, placed on a rack
Please note: no greasing is required, as platinum silicone is naturally nonstick. Allow 8 to 12 hours of freezing at -18 °C before unmolding: an incompletely frozen dessert will deform.

The PX060 produces 5 individual 600 ml cylindrical logs in one batch. A classic single-cavity log mold makes one large 1,200 to 1,500 ml log to be cut into portions. The PX060 is a boutique production tool: 5 finished pieces per batch, with no cutting required.
How long should it be frozen?
Allow 8 to 12 hours at -18 °C for a 600 ml log. The elongated shape takes longer to freeze through than a round entremets of the same volume, so do not shorten this time.
Can this mold be used for inserts in round entremets?
Yes, a cylindrical Ø40 x 560 mm cavity can be used as an insert for a large-diameter round entremets. Freeze it, cut it into slices of the desired length, then place them inside your entremets.
