Frequently asked questions
Does the frame need to be greased before use?
For oven baking: butter or line with parchment paper. For assembling a chilled entremets: line with rhodoid — no butter is necessary, as the rhodoid ensures easy unmolding.
How can I remove the frame without damaging the entremets?
The entremets must be completely frozen. Briefly run a blowtorch over the frame’s outer sides (2–3 seconds), then lift the frame vertically. The rhodoid will then peel away cleanly.
Dishwasher-safe?
Hand washing is recommended to preserve the stainless steel’s shine. Use hot, soapy water and dry immediately to prevent limescale marks.
Can I use it as a cutter?
Yes — place it on your chilled preparation and press down firmly. You’ll get a clean, straight cut. Commonly used for operas, entremets, and rectangular biscuits.
