Uses
- Chilled entremets: upside-down assembly, insert, mousse, sponge, freeze, then release
- Charlotte: line with ladyfingers, fill with bavarian cream, and chill until set
- Baked cheesecake: line the ring, bake directly, and remove the ring after cooling
- Tall sponge cake for layer cakes, or cake to be cut using the ring
Please note: for a clean release and smooth edges, line the inside of the ring with a 6 cm-high acetate strip before assembling chilled desserts.

What is the difference compared with the H4.5 cm ring?
The 6 cm height allows three-layer assemblies with an insert (charlotte, tall cheesecake, thick sponge cake). The 4.5 cm height is suitable for thinner entremets and more contemporary formats.
How can I remove the ring without damaging the entremets?
The entremets must be completely frozen. Run a blowtorch over the outer walls for a few seconds, or use a warm, damp cloth, then lift the ring vertically.
Is it dishwasher-safe?
Hand washing is recommended to preserve the stainless steel's shine; dry immediately to prevent limescale marks.
