In Amatika White 35%, powdered milk is replaced by 21.8% defatted almond powder. In Amatika 46% (milk alternative), it is 16.1% almond powder. The result: a naturally profile with notes of soft and roasted almonds.

Is Amatika tempered like classic chocolate?

Yes, exactly the same way. The tempering curves are almost identical to traditional white/milk chocolates (40-45°C / 26-28°C / 28-31°C depending on the reference). No adjustment needed in your professional habits.

What pairings for Amatika?

Amatika 46% pairs well with orange blossom, jasmine, almond paste, banana, peach, and lemon. Amatika White 35% goes well with cherry, rhubarb, anise, violet, black truffle, rosemary, as well as raspberry, lemon, and coconut.

Is Amatika suitable for lactose-intolerant people?

Yes. Amatika contains no dairy products. However, it is made in a facility that handles milk (possible traces). For severe allergies, check the bag label for the exact mention.
