Frequently asked questions
Your questions, our advice
How can you achieve a pastel lavender shade with Lilac?
Lilac is a color that is highly sensitive to the base used. For a pastel finish close to a lavender shade, first color a small amount of white sugar paste, then mix this colored paste into a larger quantity of white paste. This gradual dilution technique produces a much more even color and prevents accidental over-coloring, which can shift the shade toward an overly saturated purple.
Why does Lilac change in the light?
Violet and lilac pigments (E122 and E133) are among the most sensitive to UV rays. Direct exposure behind a sunlit display window can fade the color within hours. To preserve the intensity of your shade, store your finished creations in an opaque cake box until it's time to present them.
Can this gel be used in white chocolate?
As this gel is water-soluble (water-based), it is not recommended for coloring large quantities of pure chocolate, as it could cause the mixture to seize due to the incompatibility between water and fat. For chocolate, choose dedicated oil-soluble colorings. For small details or cream-rich ganache, this gel can be used with care in very small amounts.
