Passion-red matte velvet effect on frozen entremets, with a peach-skin finish
The FUNCAKES red velvet spray deposits a matte, textured coating on a fully frozen surface, thanks to the thermal shock caused by the pigmented vegetable fat in the spray when it comes into contact with the cold. It creates the characteristic peach-skin finish of high-end entremets and mousses, ideal for red-fruit, Valentine's Day, and Christmas creations.

Instructions: let the can return to room temperature (20-25 °C) for 2 hours, warm it in a bain-marie at 25-35 °C if necessary to make it more fluid, then shake vigorously. The dessert must be completely frozen through (at least 4 to 6 hours at -18 °C): it is this temperature contrast that creates the velvet effect. Spray from 20-25 cm away in successive thin layers, then leave to rest for 4 hours in the refrigerator before serving.

Why does my velvet coating run after application?
There are three common causes: the entremets was not frozen enough through (at least 4 to 6 hours at -18 °C), the spraying distance was too short, or the layer applied was too thick in a single pass. Apply several thin layers instead.
Is this spray suitable for creations intended for children?
It contains the colorants E129 and E122, which require a regulatory warning regarding activity and attention in children. Use with discretion for young audiences; if necessary, choose a shade without this type of colorant.
Must the dessert be frozen before using this spray?
Yes, the velvet effect results from a thermal shock between the warm spray and the very cold surface. Without freezing the dessert through, the finish will be smooth and greasy rather than velvety and matte.
