Crème Mold by Emmanuele Forcone
3D relief with fluid curves, designed by Emmanuele Forcone
The Crème mold was created through a collaboration between Pavoni and pastry world champion Emmanuele Forcone. Its elongated shape with continuous curves creates a 3D surface relief, without facets or pronounced angles, for a smooth, enveloping finish once unmolded.
Technical specifications
25 x 8.4 x 7.5 cm
Dimensions
1000 ml
Volume
-40°C to +250°C
Thermal resistance
Recommended uses
- High-end entremets and Bavarian desserts requiring generous volume
- Modern Christmas logs without added decoration—the relief is striking enough on its own
- Velvet spray, mirror glaze, or chocolate accents that highlight the relief
- Direct transfer from freezer to oven thanks to the silicone's thermal resistance
Please note: the mold's fluid relief strongly highlights glossy glazes: smooth the surface of the mixture before freezing to prevent air bubbles from showing once unmolded.
