This concentrated oil-soluble food colouring is designed for fat-based pastry mixtures: melted white chocolate, ganache, buttercream and sugar paste worked with the warmth of your hands. It naturally suits tropical and exotic fruit-themed layer cakes and brunch cupcakes with fruit decorations.

Directions for use
- Shake the bottle for 10 seconds before use and add to a base tempered to between 25 and 30°C
- Typical dosage: 2 to 4 drops per 250 g for a pastel shade, up to 20 drops for a dark shade
- Mix for 30 to 60 seconds, then let rest for 30 minutes: the shade fully develops during resting
- Do not use on a water-based mixture (royal icing, syrup): the water-soluble Colour Mill range is intended for this purpose
Please note: the 20 ml size is suitable for shade testing and occasional use; for regular production, the 100 ml size from the Colour Mill range costs less per ml.

No, this oil-soluble colouring is designed for fat-based mixtures. For royal icing, syrups or water-based icings, use the water-soluble Colour Mill range.
Should the dosage be adjusted according to the quantity of mixture?
Yes, the stated dosage is for 250 g of base: proportionally double or triple the number of drops for larger quantities.
How should the 20 ml bottle be stored after opening?
Close it tightly after each use, store it away from light at between 15 and 22°C, and use it within 12 months to preserve pigment intensity.
