What is freeze-drying?
Freeze-drying is a cold dehydration process: the product is frozen then placed under vacuum so that water goes directly from solid to gas state (sublimation), without passing through the liquid state. Unlike conventional oven drying, this process preserves cell structure, volatile aromas, natural color, and heat-sensitive vitamins. The result: a light, crispy product that immediately regains its properties when in contact with liquid.
Storage: keep between 15 and 25 °C in a dry place, away from light, in the original closed packaging. Close the container well after each use to preserve the crispy texture.
