Uses
- Royal icing and buttercream, for Christmas, birthday, or Valentine's Day cakes
- Fondant and sugar paste: 0.3 to 1 g of gel per 250 g, depending on the desired intensity
- Sponge cakes and cookies (red velvet, seasonal decorations)
- Creams, ganaches, and macarons
- Mixes with other gels in the range to create new shades
Dosage tip: add the gel drop by drop and mix thoroughly between each addition; it is easier to intensify a shade than to correct it. For a very rich red, color the mixture the day before and let it mature covered with plastic wrap in a cool place.

Frequently asked questions
How many drops of red gel should I use for 300 g of buttercream?
Use 2 to 6 drops depending on the desired intensity, from light red to vivid red. Add the gel gradually and mix well between each addition.
How can I achieve a very rich red without thinning the mixture?
Color the mixture the day before and let it mature covered with plastic wrap in the refrigerator: the color will continue to develop without needing to add more gel.
Is Dr Oetker red gel food coloring suitable for vegetarians?
No, it contains carmine (E120), an animal-derived colorant extracted from cochineal insects. For a vegan alternative, choose a gel without E120.
