Inspiration

Traditional brioche dough, folded in 3 layers with generous inclusion of 32% milk chocolate chips. Braided and baked for 25 minutes at 170°C. The chips hold their shape and melt just at tasting.

Yes, that’s their specialty. The sizing and composition are designed so the chips keep their shape and integrity even after baking at 180-200°C. They melt just enough to release flavor without collapsing into the dough, unlike classic couverture chocolate simply chopped.

How many chips per cookie?

Standard recipe: 100-120g of chips for 12 cookies, about 10g per cookie. For very chocolatey cookies, increase to 150g per 12 pieces. The 6kg size contains about 45,000 chips for the dark ones.

Which size to choose: 250g or 6kg?

250g for enthusiasts or testing (about 25-30 cookies). 6kg for bakeries and pastry shops that produce regularly. The 6kg professional size offers a better price per kg and a resealable airtight bag.

Can the chips be used for tempering?

No, the chips are designed for baking in dough, not to be melted and then tempered like classic couverture chocolate. For tempering, use Valrhona beans (Caraïbe, Guanaja, Jivara, etc.) which have the appropriate fluidity.
