Storage

No, heat and humidity destroy the sparkling effect. Peta Crispy is used exclusively cold and in a dry environment. For inclusions in chocolate, the granules must be incorporated into tempered chocolate at the end of crystallization, just before molding, to minimize contact with heat.
When should I add the granules to my creations to preserve the sparkling effect?
Always add at the last minute on dry surfaces, just before serving or delivery. In prolonged contact with a moist surface (cream, icing, mousse), the coating softens gradually and the CO2 is released prematurely, eliminating the sparkling effect.
How long do they keep after opening?
Maximum 15 days with a desiccant sachet, at 16-18 °C. This product is particularly sensitive to humidity and heat — above 18 °C, the white chocolate coating may slightly melt and the granules may clump. It is recommended to reseal the jar tightly after each use.
