The Peta Crispy Chocolat Blanc Sosa 750 g is popping candy coated with white chocolate (51%). On contact with saliva, each granule releases the characteristic bubbles of popping candy, enveloped by the creamy sweetness of white chocolate with natural vanilla flavoring: a playful effect in the mouth for your creations.
The white chocolate coating allows this popping candy to withstand moisture much better than uncoated popping candy, while providing an elegant cream color and a rich flavor profile. It is a popular decoration and inclusion ingredient in artisanal chocolate-making, pastry and ice cream-making.

Tip: the popping effect is destroyed by heat and moisture. Add at the last minute to a dry surface and close the jar airtight after use. Store for 15 days after opening with a desiccant sachet, at 16–18°C.

When these crystals come into contact with saliva, they release CO2 and create the characteristic popping sensation in the mouth. Can it be incorporated into melted chocolate or a hot preparation?
No, heat and humidity destroy the popping effect. Peta Crispy must be used exclusively cold and in a dry environment, incorporated into tempered chocolate at the end of crystallization, just before pouring.
