Patissland expert’s technical advice

Dextrose has a sweetening power (SP) of about 70 to 75% compared to table sugar. For your ice creams, replace about 10% of your total sugar weight with dextrose: you will obtain a much softer structure when taken out of the freezer.

Note to Cake Design creators: If your homemade sugar paste tends to crumble, adding dextrose during kneading will provide the necessary elasticity for a perfect smoothing.
