Instructions for use
- Preparation: take the sugar paste out 30 minutes before use to bring it to room temperature.
- Kneading: knead for a few minutes to soften, until you get a smooth and homogeneous texture.
- Rolling out: roll out on a work surface dusted with powdered sugar or cornstarch (never flour), to a thickness of 3-4 mm.
- Placing on the cake: gently place on the cake previously covered with smoothed ganache or buttercream. Smooth with a sugar paste smoother.
- Trimming excess: cut off the surplus at the base with a knife or cutter. Keep the scraps in an airtight plastic bag for reuse.
- Storage: store unused sugar paste in an airtight bag at room temperature, away from light and heat.

How many cakes can you cover with 5 kg?
With 5 kg of covering paste, you can cover about 6-7 wedding cakes of 20 cm diameter (750 g each), or about 10 layer cakes of 15-18 cm. Add 20% margin for trimmings and tests.

For perfect covering in mass production: prepare several cakes masked with ganache in advance, refrigerate them well. Roll out the covering paste in 750 g portions (size of a 20 cm cake), one at a time, to prevent it from drying out. Keep the remaining paste in the airtight bag between uses. For tiered wedding cakes, cover each tier separately, let crust for 2 hours, then assemble with internal supports (dowels) to support the weight.
