Instructions for tiered cakes

1. Choose the right length (16 or 30 cm)

16 cm: for cake tiers 10-15 cm high (most standard wedding cakes). The length slightly exceeds your tier to give you a safety margin.

30 cm: for very tall tiers (20-25 cm), or to make a central rod that passes through several tiers at once (anti-slip technique for transport).

If in doubt: choose the longer length, you can always mark the dowel with a pencil and break off the excess if needed (wood is brittle with pliers).

2. Marking the layout before insertion

Before inserting the dowels, mark their placement with a toothpick or a light knife mark on the cake surface. Arrange in a regular circle, about 2-3 cm from the inner edge of the area that will be covered by the upper tier. Generally count 5 to 8 dowels per tier depending on the weight to support.

3. Vertical insertion into the cake

Insert the dowels perfectly vertically (tilting would weaken the entire structure). Since the wood is rigid, insertion is easier than with plastic on firm cakes. Push until the dowel touches the board below (cake drum or cake board). If your tier is shorter than 16 cm, the dowel will protrude a few cm — this is normal and can be corrected in the next step.

4. Adjusting height if necessary

If the dowels extend beyond the cake surface: mark the exact height, remove the dowel, and cut the excess with a fine saw (Décora wooden dowels cannot be cut with scissors like PME Easy Cut). You can also break the dowel with pliers after scoring it with a cutter at the mark. The wood must be perfectly flush with the cake surface to allow placement of the upper cake drum.

5. Placing the intermediate cake drum

Once the dowels are in place and flush with the surface, place a 12 mm cake drum cut to the exact size of the upper tier on top. This drum will distribute the weight across all dowels and prevent the upper tier from sinking into the cake below. Without this rigid intermediate plate, dowels alone are not enough — this is beginners' mistake #1.

6. Central through rod (pro technique)

For 3+ tier wedding cakes intended for long-distance transport: use a 30 cm dowel as a central through rod. Pre-drill a central hole with a long skewer needle, then insert the 30 cm dowel vertically through all stacked tiers. This technique stabilizes the entire structure vertically and prevents any lateral slipping or rotation of the tiers during transport. Essential for deliveries over 30 minutes away.

How many dowels per tier?

General rule according to the weight to support above:

Light tier up to 1 kg: 5 dowels in a circle

Medium tier 1-2 kg: 6 dowels

Heavy tier 2-3 kg: 7-8 dowels

Since wood is more rigid than plastic, you can use 1 stick less than with plastic dowels. But when in doubt, always add more: one extra stick is free, a collapsed wedding cake is a disaster.

Wood or plastic: what to really choose?
