Its reduced height of 2.5 cm precisely supports thin layers without excess material on the sides, for clean, even slicing. Made in France from stainless steel, it comes in 3 diameters to suit the number of servings you need.

Tips for use
- Flat assembly: place the ring on the serving plate or a baking sheet lined with parchment paper, then fill with successive layers (sponge, crémeux, glaze).
- Unmolding: line the inside with a strip of acetate for a clean edge, especially with frozen or mousse-based preparations.
- Baking: suitable for baking shortcrust or sweet pastry thanks to its low height; place directly on a baking sheet.
- Freezing: the ring can go from the freezer to the work surface without deforming, making it practical for entremets prepared in advance.
