Do you need to grease a stainless steel mold?

Yes, unlike silicone, a stainless steel mold requires greasing before baking: butter + flour (the classic method), or food-grade release spray (the modern, faster method). Without greasing, the cake sticks to the stainless steel and breaks during unmolding. For very sweet batters (madeleines, financiers): double greasing is recommended.

How do you care for a stainless steel mold?

Wash immediately after use with hot soapy water. For stubborn baking residue: soak for 30 minutes in boiling water + baking soda. Dry immediately with a clean dish towel to prevent limescale marks. Store in a dry place, stacked with interleaving paper to prevent scratches. Dishwasher safe, but hand washing is preferable to preserve the shine.

Can a stainless steel mold go in the freezer?

Yes, stainless steel withstands temperatures from -60°C to +250°C. Suitable for the oven, freezer, blast freezer, and dishwasher.
