Usage tips
- Placement: place the rack on a clear work surface, ideally near a window to speed up cooling.
- Transfer: unmold the hot pastry and place it directly on the rack. For cookies, transfer them one by one with a spatula.
- Rest time: minimum 30 minutes for cookies, 1 to 2 hours for cakes, 4 hours for assembled pieces before glazing.
- Humidity tip: on humid days, place a sheet of parchment paper under the rack to absorb condensation.
- Storage: store flat away from dust, hang when possible to save space.
