Instructions
- Conditioning: remove the fondant from its packaging 15 to 30 minutes before use so it reaches 18 to 22 °C.
- Kneading: knead for 1 to 2 minutes to soften it. If it remains firm, microwave it for 5 to 10 seconds.
- Rolling: dust the work surface with powdered sugar or cornstarch, never flour. Roll out to a thickness of 3 to 4 mm.
- Covering: place the fondant over a cake already coated with ganache or smooth, chilled buttercream, then smooth the top before the sides.
- Finishing: trim the excess with a knife or fondant wheel, then smooth once more with a fondant smoother to remove air bubbles.
Store at room temperature (15 to 22 °C), in its original airtight packaging, protected from light and heat. Do not refrigerate: moisture makes the fondant sweat and become sticky on the surface. Once opened, wrap the remainder in plastic wrap, place it in an airtight container, and use within 2 to 3 weeks.
