Instructions for use

  1. Preparation: before first use, wash with hot soapy water, rinse, and dry.
  2. Setup: place the mold on a GN 60x40 cm perforated tray before filling, to facilitate transport and ensure even air circulation in a ventilated oven.
  3. Filling: fill each mold to 90% of its capacity (about 58 ml) to allow the batter to expand without overflowing.
  4. Baking: follow the temperatures recommended by your recipe. For traditional savarins, bake for 14 to 18 minutes at 180 °C in a convection oven.
  5. Cooling: let cool for 10 minutes on a rack before unmolding, or place in a cooling cell for cold preparations.
  6. Unmolding: turn the mold over on a rack or parchment paper, gently press the bottom of each mold. No greasing spray needed.
  7. Care: dishwasher safe. Never use sharp objects in the molds. Store flat or hanging.

Patissland tip for the perfect savarin

For a clean central hole that perfectly holds an insert or fresh fruit, do not fill beyond 90% of the mold's capacity: savarin batter doubles in volume during baking and overfilling deforms the central hole. For frozen desserts unmolded cold, place the filled mold for 1 hour in a cooling cell at -40 °C: the surface contracts and releases the mold in one motion, without sticking.
