Can Valrhona Absolu Cristal glaze be colored?
Yes, it is even one of its most common uses. Add food coloring (powder or fat-soluble for fatty glazes) to the fluid glaze at 40°C, mix well. You get a shiny colored glaze to use like a classic mirror glaze but without the complex preparation.
