Colour Mill Burgundy is a concentrated oil-soluble colouring, supplied in a 20 ml dropper bottle. Its oil-based formula blends directly into chocolate, cocoa butter, ganaches and fat-based creams without causing the mixture to seize or become grainy. The Burgundy shade gives a deep, velvety burgundy red, darker and more muted than Red.

Please note: this colouring is oil-soluble and does not dissolve in water-based preparations (royal icing, syrup). Shake the bottle before use and add the colour gradually: it is easier to darken a shade that is too light than to lighten a base that is already too strong. Store away from light and heat, with the bottle tightly closed.

Can it be used to colour cocoa butter for a velvet spray?

Yes, Burgundy disperses well in melted cocoa butter and can be used to prepare a mixture for spraying with a spray gun. Test the shade on a neutral surface first.

Does the colour withstand baking in the oven?

Burgundy is mainly intended for preparations that are not cooked after colouring (chocolate, ganache, icing, buttercream). In oven-baked dough, the colour may fade slightly depending on the temperature and baking time.

Can the Burgundy shade be made darker if needed?

Yes, add the colouring gradually, drop by drop, mixing between each addition: it is easier to darken a shade that is too light than to lighten a base that is already too strong.
