Usage tips
For entremets, line the inside with a strip of acetate before pouring: unmolding is clean, without sticking. For baking tarts, place the ring on a baking sheet lined with parchment paper and lightly butter the wall. When unmolding a frozen entremet, briefly pass a blowtorch or heating strip around the ring, then lift vertically.
Avoid abrasive sponges that scratch stainless steel. After baking, the ring remains hot for several minutes: handle it with protection. Hand wash or dishwasher, dry immediately.
