Kouglof is the symbol of Alsatian pastry: a soft brioche with raisins and almonds, recognizable by its fluted, twisted ring shape. Traditionally served for breakfast or as a snack, it pairs just as well with coffee as with tea. Its yeast-raised dough, rich in butter and eggs, requires a little patience while it rises, but the result is well worth the effort. The Patissland version is alcohol-free: the raisins are soaked in warm apple juice. Once unmolded and dusted with powdered sugar, kouglof has a fragrant, pull-apart crumb that is irresistible.
