The Wilton non-stick rack 40 x 25 cm is designed for sticky preparations (caramel, honey, melted sugar). Non-stick steel, size 40.6 x 25.4 cm. Essential to avoid condensation under pastries fresh from the oven and ensure even cooling.
Proper cooling of a cake is as important as its baking: without a rack, residual heat continues to cook the bottom of the cake, drying out the biscuits and causing the base of viennoiseries to stick. A well-sized rack makes the difference between an amateur homemade pastry and a professional finish.

Usage tips
- Placement: place the rack on a clear work surface, ideally near a window to speed up cooling.
- Transfer: unmold the hot pastry and place it directly on the rack. For cookies, transfer them one by one with a spatula.
- Rest time: minimum 30 minutes for cookies, 1 to 2 hours for cakes, 4 hours for assembled pieces before glazing.
- Humidity tip: for humid days, place a sheet of parchment paper under the rack to absorb condensation.
- Storage: store flat away from dust, hang when possible to save space.
Care and lifespan
- • Wash by hand with a soft sponge and warm soapy water.
- • Dry completely before storing to prevent limescale marks.
- • Avoid sharp metal utensils that scratch the non-stick coating.
- • With proper care, expected lifespan of 5 to 10 years with regular use.
