SARACINO Concentrated Coffee Paste - Perfect for Pastries, Creams and Ice Creams:
Discover our concentrated coffee paste from the SARACINO brand, an ingredient of choice for all your culinary creations. Contained in a 200g resealable jar, this paste will add a rich and tasty coffee flavor to your pastries, creams and ice creams.
To incorporate it into your cakes such as molly cake or yogurt cake, add 30g of our batter to 500g of cake batter. To prepare Bavarian mousses, mix 25g of our concentrated coffee paste with 500ml of crème fraîche. Finally, for creams and ice creams, mix 25g for 500g of preparation.
One of the most common challenges when creating different flavors, especially citrus-based ones, is heat stability. Saracino flavors have therefore been developed to offer a consistent flavor that resists cooking. Our concentrated paste is perfect for cakes, ganaches, macaroons, cupcakes, sponges, ice creams and yogurts.
For optimal use, use 100g of our dough per liter of crème fraîche for a mousse, 100g per liter of milk for a bavaroise, 120g per kg of product mixture for a cake. For ice cream, use 100/120g of dough per kg of mixture. Simply mix the flavoring paste with the other ingredients for about a minute to achieve a perfect mixture.
