Its role in the team

The Marathoner

Retains heat for long baking times

The ceramic coating accumulates heat and releases it gradually. This is the tray chosen for tall sponge cakes that require slow baking, brioches that need to rise gently, and pastries sensitive to thermal shocks. Bonus: the ceramic is healthy, free of PFOA and Teflon.

Usage tips

  1. Preheating: preheat the oven to the desired temperature before baking. For dry cookies and pastries, aim for 180-200°C; for sponge cakes and soft preparations, 160-170°C.
  2. Sheet preparation: line with parchment paper or place a silicone mat to facilitate unmolding and preserve the non-stick coating long-term.
  3. Oven positioning: place the sheet on the middle rack for balanced baking. For a browner bottom, move down one level; for a browner crust, move up.
  4. Out of the oven: immediately transfer pastries to a cooling rack after baking, otherwise residual heat continues to cook the bottom.
  5. Cleaning: let cool slightly, then clean with a non-abrasive sponge using warm soapy water. Avoid metal sponges that scratch the coating.

Care and lifespan

  • Wash by hand with a soft sponge and warm soapy water.
  • Dry completely before storing to prevent limescale marks.
  • Avoid sharp metal utensils that scratch the non-stick coating.
  • With proper care, expected lifespan of 5 to 10 years with regular use.
