Usage tips
Work with a well-fluid mixture of chocolate and cocoa butter, around 40 to 45 g per 100 g of chocolate, and spray onto a dessert just out of the freezer: the thermal shock solidifies the micro-droplets and creates the velvet texture. Clean the tank and nozzle with heat after each use.
