Passion Fruit Flavouring Paste 200 g
Concentrated paste with 30% passion fruit pulp: a fresh, tangy flavour without adding water to your mixtures.
Saracino Passion Fruit flavouring paste adds the tropical, fresh and slightly tangy taste of the fruit to creams, ganaches, mousses and cake batters. Formulated with 30% passion fruit pulp, it is much more concentrated than fresh fruit or purée: just a few grams are enough for a distinct result, without adding moisture that would make dough soggy or destabilise a cream.
Its smooth texture blends evenly, and the flavour holds up well to baking and freezing. Coloured with beta-carotene, it also gives light-coloured mixtures a natural yellow-orange hue.

- Mousses, Bavarian creams and crémeux: mix into the base before folding in the whipped cream; suitable for freezing.
- Tart and dessert fillings: flavour pastry cream, whipped ganache or curd.
- Ice creams and sorbets: flavour the mix before churning.
- Sugar paste and fondant: knead in a small amount to flavour a covering or cake decorations.
Dosage: start with around 30 to 50 g per kilo of mixture, taste, then adjust according to the desired intensity. As the paste is sweet and acidic, account for its sugar and acidity content in recipes that are sensitive to these factors (meringues, buttercreams).

Frequently asked questions
Your questions, our advice
What's the difference compared with passion fruit purée?
The purée is made mostly of water and is used in large quantities, which changes the texture of a mixture or cream. The flavor paste, concentrated to 30% pulp and bound with pectin and agar-agar, delivers flavor in just a few grams without changing the consistency.
Does the flavor hold up during baking?
Yes. The flavor is preserved in sponge cake, cake, or baked biscuits, and remains stable after freezing, making it suitable for entremets and inserts.
Does the paste color preparations?
Slightly: beta-carotene (E160a) provides a natural yellow-orange tint, visible in buttercream or a light-colored mousse. For a more intense color, add food coloring.
What allergens does it contain?
No major allergens in the recipe, but it may contain traces of egg, peanuts, soy, milk, and tree nuts. Check the label on the jar you purchased before use.
