What's the difference compared with the Charme PX43129S mold?
The KE113S is a large-format Pavocake mold, 180 mm (approximately 1050 ml), for one entremet to share in 6 to 8 portions. The PX43129S has 12 individual 78 mm cavities for plated desserts. See the Charme PX43129S individual-size mold.
What diameter insert should I use?
An insert 12 to 14 cm in diameter leaves a generous layer of mousse around the edge. Always freeze the insert before assembly to make it easier to handle.
Is this mold suitable for direct baking?
Yes, up to 280 °C, for a sharing-size travel cake such as a sponge cake or lemon cake, with the ladyfinger pattern retained after baking.
