Saracino MallowUp is a powdered preparation that replaces the classic marshmallow recipe (cooked sugar syrup, gelatin, whipped egg whites) with a single cold-preparation step: add room-temperature water, let it rest, then whip. The mixture gradually increases in volume until it becomes stable and firm. Depending on how you use it, it produces either marshmallows to cut and leave to dry, or marshmallow cream to pipe directly onto cupcakes, layer cakes, and plated desserts.
Neutral flavor and white color: the ideal base to color and flavor according to the season or cake theme. Formulated without gluten, with egg albumin as a foaming agent.

Instructions
- Pour 270 g of room-temperature water over the 500 g of preparation.
- Mix thoroughly until all lumps have disappeared.
- Let the mixture rest for 15 minutes: this pause is part of the method and allows the gelling agents to hydrate.
- Whip with a mixer for 60 to 90 seconds at moderate speed.
- Continue at high speed for 5 to 6 minutes, until you obtain a stable, white, well-whipped mixture.
For part of the packet, maintain the ratio of 54 g of water per 100 g of powder. Also refer to the instructions printed on the original packaging.
Two Uses for One Preparation

Homemade marshmallows: spread the whipped mixture onto an oiled tray or into a frame, or pipe it into strips, then let it dry completely in a dry place before cutting and coating it in a mixture of powdered sugar and cornstarch.

Colored or flavored marshmallows: incorporate a water-soluble coloring or flavoring at the end of whipping for marshmallows matching a theme (Halloween, Christmas, Easter, baby shower).

Marshmallow cream and frosting: use the whipped mixture as is, with a piping bag, to fill and decorate cupcakes, layer cakes, and entremets.
