Gauge 24 sits in the middle of the Azucren range: more rigid than gauges 26 and 28, which are reserved for fine petals, and easier to work with than gauges 18 and 20 used for the framework. Tip: dip the end of the wire in a little edible glue before inserting it into the base of the petal, then pinch the paste around the wire for a secure, clean anchor. The 40 cm stems can be cut into two or three segments for the petals.
