Work in a draft-free area: gold leaf is very light. Pick it up with a dry brush or tweezers, without touching it with your fingers where it immediately sticks. Place it on a slightly sticky surface (icing, gel, barely set chocolate), then gently press with the brush. Apply the leaf as the last step, just before serving or displaying.
