Lightly flour the cookie cutter before each cut, or dip it in starch when working with sugar paste.
What thickness should the dough be?
Roll out to 4-5 mm: thick enough for a clear imprint, thin enough to bake evenly.
Will the imprint still be visible after baking?
Yes, with firm shortcrust dough that doesn't rise much, chilled before baking. Doughs high in leavening or soft butter blur the pattern more.
