50 White Floral Stems, Gauge 20
The supporting wire for large and heavy flowers.
Gauge 20 is the second-thickest wire in the Azucren white range, just below gauge 18. It is designed to support large or heavy sugar flowers: XXL peonies, dahlias, and open roses with many petals. Its 40 cm length can be bent, twisted, and reinforced without compromising the stability of a complex floral assembly.

Recommended uses
- Main stem for large flowers: XXL peonies, dahlias, open roses
- Internal framework for a complex floral assembly with multiple petals
- Support structure when gauge 18 is too thick for the intended flower
- Solid base for petals mounted on thinner gauges (24 to 28)
Patissland tip
Tip: reserve gauge 20 for main stems and internal support structures. For petals and leaves, use gauges 24 to 28: the hierarchy of thicknesses gives the finished flower a natural shape.

Frequently asked questions
Gauge 20 or gauge 18—which is the difference?
Gauge 18 is even thicker and intended for the heaviest assemblies and sugar-paste work. Gauge 20 remains very rigid but is better suited to the main stems of classic large flowers such as peonies or dahlias.
Can two gauge 20 wires be twisted together?
Yes, this is the recommended technique for a reinforced central stem, for example for an XXL peony. Twist two wires together before building the flower center, then add the petal rows using thinner gauges.
Is this wire edible, or can it touch the cake?
No, it is not edible. Always isolate the base of the stem in a food-safe straw or dedicated support before inserting it into a tiered cake, and remove the arrangement before cutting.
