Frequently asked questions
How do you use Absolu Cristal glaze?
Heat the glaze to 35-40°C in a bain-marie or microwave in 20-second intervals, stirring between each, until it becomes fluid. Pour it over the pastry (entremet, tart) on a rack using a ladle, and let the excess run off. The shine is instant. Store at room temperature after use.
Can you color Absolu Cristal glaze?
Yes, this is actually one of its most common uses. Add food coloring (powdered or oil-soluble for fat-based glazes) to the fluid glaze at 40°C and mix well. You’ll get a shiny colored glaze to use like a traditional mirror glaze, but without the complex preparation.
Neutral glaze vs. homemade mirror glaze?
Homemade mirror glaze requires condensed milk, sugar, glucose, gelatin, and white chocolate: a lengthy, technical preparation. Valrhona Absolu Cristal glaze is ready to use: simply heat and apply. A major time-saver in production. The visual result is similar (crystal-clear shine), but homemade glaze provides slightly more body and firmness.
How much glaze do you need for an entremet?
Standard: 200-300 g of glaze for an 18 cm diameter entremet. The 5 kg bucket is enough to glaze about 15 to 25 entremets, depending on their size. Any excess that runs off during glazing can be collected from the rack, remelted, and reused.
