- Take the disc out of its packaging 5 minutes before use to restore its flexibility at room temperature.
- Prepare the cake with a thin, even layer of buttercream or smooth ganache.
- Gently unroll the pre-rolled disc by lifting it by the edges.
- Place the disc centered on the cake, without pressing the center.
- Smooth by hand then with a sugar paste smoother, from the center to the edges.
- Cut excess with a pizza cutter or smooth knife, flush with the base.
- Keep scraps under cling film for reuse as decoration.
