Rhodoid Strip / Azucren Acetate Roll – 12cm x 10m
The secret to perfectly smooth edges
The Azucren rhodoid strip (also called acetate film) is an essential tool for all fine pastry enthusiasts. This transparent and semi-rigid film is placed inside your pastry rings or frames to ease the unmolding of your mousses, bavarois, and cheesecakes while ensuring a clean and shiny finish on the sides.
Why use the Azucren acetate strip?
-
Flawless unmolding: It prevents the mixture from sticking to the walls of your steel molds. Once the cake is set by the cold, simply remove the ring, then gently peel off the strip for a result worthy of a shop.
-
Comfortable height: With its 12 cm height, this roll is ideal for tall desserts, tiered cakes, or modern layered cakes.
-
Practicality and savings: Presented in a 10-meter roll, you just need to cut the exact length needed for your mold’s circumference.
-
Food-grade quality: Made by Azucren, this film is certified for food contact, sturdy and transparent to monitor your assembly layers.

Usage guide for a professional result
-
Preparation: Cut a strip of rhodoid slightly longer than the circumference of your ring.
-
Placement: Place the strip inside your mold. If needed, lightly moisten the mold’s wall with a brush so the film sticks perfectly.
-
Assembly: Pour your preparations (mousses, creams, biscuits) directly inside.
-
Unmolding: After setting in the cold, remove the steel ring. The strip holds the cake. Remove the film just before tasting or glazing.
Patissland expert tip: For desserts with a mirror glaze, leave the rhodoid on until the last moment. Its ultra-smooth surface allows the glaze to flow smoothly and evenly over the cake’s edges without any roughness.
