Your questions, our advice
How many drops should I use to achieve the Raspberry shade?
Use about four to six drops per 100 g of fat for a well-defined Raspberry shade. Gradually mix it into melted chocolate or lukewarm buttercream, stirring between each addition.
Is this Raspberry food coloring suitable for sugar paste or royal icing?
Raspberry is an oil-based food coloring formulated for fatty mixtures: melted white, dark or milk chocolate, cocoa butter, ganache and buttercream. It is not designed for water-based mixtures such as royal icing or sugar paste mixed with water, in which it will not disperse properly. Reserve it for fat-based mixtures, especially for berry entremets and Valentine's Day decorations.
Can Raspberry be mixed with another Colour Mill shade?
Yes, Colour Mill oil-based food colorings can be mixed together to adjust Raspberry to a lighter or deeper shade. Test on a small amount of fat before coloring the entire mixture.
