Pavoni's fat-soluble Lemon Yellow powder colorant from the Chocolart range is an ultra-concentrated food colorant that disperses in melted fats. Packaged in a 40 g jar, it is intended for decoration and coating, coloring cocoa butter, and use in preparations such as almond paste, fondant, ganaches and creams.

Lemon yellow evokes citrus fruits, sunshine and freshness. It is ideal for bright decorations, spring themes and Easter creations.
Disperse a small amount in melted cocoa butter at around 35 to 40 degrees C, then adjust: this yellow is highly opaque. It can also be used as a base for creating greens and oranges. This colorant is not designed for water-based preparations.

What's the difference between fat-soluble and water-soluble food coloring?
A fat-soluble food coloring disperses in fats, such as cocoa butter. A water-soluble food coloring dissolves in water. For any fat-based preparation, a fat-soluble coloring like this one is necessary.
Can you make greens or oranges with this yellow?
Yes. Lemon yellow is a base: add a touch of blue to make greens, or a touch of red to make oranges. Disperse in melted cocoa butter and mix well.
Does it contain any allergens?
It contains the colorant E102, with the regulatory warning regarding children's attention. It may contain traces of milk and tree nuts.
