COLOUR MILL

Colour Mill Water-Soluble Lime Colouring

Lime shade, 20 ml bottle for water-based applications

Colour Mill Water-Soluble Lime evokes the peel of a lime and tangy tropical fruit. This water-based food colouring is designed for water-based baking preparations: royal icing, water-based glazes, syrups, meringues and macarons. It is regularly used for tropical smoothie-themed royal icing cookies and fun young adult birthday cookies.

Features

  • Concentrated water-soluble food colouring for water-based preparations: royal icing, water-based glazes, syrups, meringues and macarons
  • Not compatible with fat-based preparations (chocolate, ganache, cocoa butter): the water will cause the chocolate to seize
  • 20 ml soft squeeze dropper bottle for precise dosing
  • Colour remains stable after royal icing has fully dried (approximately 24 hours), with no change in tone
  • Gluten-free, lactose-free, egg-free, peanut-free and soy-free; suitable for vegetarian and vegan diets

Directions for use

  • Shake the bottle before use and add to a base at room temperature (18 to 22°C)
  • Usual dosage: 2 to 4 drops per 250 g for a pastel shade, up to 20 drops for a dark shade
  • Mix, then let stand for 15 minutes before adjusting the shade if needed
  • To colour chocolate or ganache, use the Colour Mill oil-soluble range, not this water-soluble colouring

Please note: this colouring is water-based: it must never be added to melted chocolate or ganache, as it may cause the preparation to seize.

Frequently asked questions

Is this colouring suitable for royal icing?

Yes, this is its primary use: it is designed for water-based preparations (royal icing, water-based glazes, syrups, meringues and macarons) and dries without any change in shade.

How many drops should I use for 250 g of preparation?

Use 2 to 4 drops for a pastel shade, 5 to 10 drops for a bright shade, and up to 20 drops for a dark shade. It is best to add the colouring gradually.

A separation has appeared in the 20 ml bottle—is this normal?

Yes, slight separation between the pigment and the carrier liquid is normal during prolonged storage: shake for 10 seconds before each use.
