COLOUR MILL

Colour Mill Water-Soluble Cobalt Food Coloring

Cobalt shade, 20 ml bottle for water-based mixtures

Colour Mill Water-Soluble Cobalt evokes Delft ceramic pigment and tropical fish scales. This water-based food coloring is designed for water-based confectionery: royal icing, water-based glazes, syrups, meringues, and macarons. It is a popular choice among cake designers for tropical ocean-themed royal icing cookies and biscuits for Mediterranean destination wedding cakes.

Features

  • Concentrated water-soluble food colouring for water-based mixtures: royal icing, water-based glazes, syrups, meringues, macarons
  • Not suitable for fat-based mixtures (chocolate, ganache, cocoa butter): the water causes chocolate to seize
  • 20 ml soft dropper bottle for precise dispensing
  • Shade remains stable once the royal icing has dried completely (about 24 hours), with no change in tone
  • Gluten-free, lactose-free, egg-free, peanut-free, soy-free; suitable for vegetarian and vegan diets

Directions for use

  • Shake the bottle before use and add to a mixture at room temperature (18 to 22 °C)
  • Typical dosage: 2 to 4 drops per 250 g for a pastel shade, up to 20 drops for a dark shade
  • Mix, then leave to rest for 15 minutes before adjusting the shade if needed
  • To colour chocolate or ganache, use the oil-soluble Colour Mill range, not this water-soluble food colouring

Your questions, our advice

Does the colour hold after the icing has dried completely?

Yes, the shade remains stable once the royal icing has dried completely, after about 24 hours, making it suitable for decorated cookies sold several days after they are made.

How much should I use for a highly saturated shade?

Start with 5 to 10 drops per 250 g of mixture and adjust in increments of 2 to 3 drops until you reach the desired shade, letting it rest between additions.

Does the 20 ml bottle have a dropper?

Yes, the soft bottle cap has a dropper opening: a gentle squeeze dispenses a precise drop.
