Wilton - Gel Food Coloring

Black Gel Food Coloring

Concentrated black shade for fondant, icing, and buttercream

Wilton Black Gel Food Coloring lets you precisely adjust the intensity of the shade, from pastel to deep, without thinning the mixture. Its vegetable charcoal base produces a deep, opaque black with just a few touches, without turning gray like some competing food colorings.

Recommended uses

  • Fondant and marzipan: knead for 5 to 8 minutes, then let rest for 30 to 60 minutes for the final shade
  • Buttercream and royal icing: incorporate at the end of whipping, for 2 minutes at medium speed
  • Ideal for piping-bag outlines, clean lettering, and graphic patterns (stripes, dots, Halloween themes)
  • Can also be diluted in a drop of water for airbrushing or painting on dried fondant

Measure with the tip of a toothpick and incorporate gradually: the shade generally darkens after 15 to 60 minutes of resting, depending on the medium.

Frequently asked questions

How much food coloring is needed for a pastel shade?
A toothpick-tip amount for 500 g of fondant or buttercream is generally enough for a pastel shade; increase gradually for a more intense color.

Is this gel food coloring suitable for chocolate?
No, this gel is formulated for water-based or emulsified fat-based mixtures (fondant, icing, cream). For chocolate, use an oil-soluble food coloring instead.

Why is my black turning gray?
Too little coloring or an already colored medium can produce a dull gray: increase the amount or start with a neutral white base.
