Usage tips
Assemble upside down, optionally lining the bottom with ladyfinger biscuits for a revisited charlotte, or pour the mousse fully with a central insert. Deep freeze thoroughly (allow one night for this volume) before unmolding and glazing. The even dome shape makes mirror glazing a foolproof process.
Note: at 9 cm height, allow 4 to 6 hours of thawing time in the display case before serving for a perfectly soft center.
